Fairy cakes

You will need:

2 Medium eggs
125g Self Raising Flour
125g Sugar
125g Butter
1 Tablespoon milk

choice of flavouring either: banana, chocolate or strawberry use 2 tablespoons of chosen flavoured milkshake powder (or leave for plain cakes)

makes 12 aprox

Preheat oven at 180*, 350*f, gas 4

Method:
  • Beat sugar and butter together in bowl until light and fluffy
  • Whisk in eggs one at a time
  • Mix in flour and milkshake powder
  • Add milk and mix
  • Place 12 fairy cake cases into a bun tin and spoon a tablespoon of cake mixture into each one.
  • Add spare mixture to new cases or add a bit more to each case
  • Place in oven and cook for 10 to 12 minuates until cooked through. If not cooked fully cook for longer and check every 3 minuates!
  • take out oven and cool for 1 hour or until fully cool.
For the icing you will need:

90g soft butter
180g icing sugar
1 tablespoon milk
2 tablespoons of chosen milkshake powder (or leave for plain icing)

Method:
  • Whisk butter and milk together to make creamy mixture
  • add icing sugar and milkshake powder
  • Whisk until light and fluffly and add more icing sugar if nessisary
  • Pipe onto cakes or spoon a tablespoon of buttercream on each
Get kids to add sprinkles, mini marshmallows or even small sweets such as dolly mixtures or smarties!
